So far this week I’ve tried 3 new recipes. Tomato soup, Grilled Eggplant & Artichoke Panini and Salmon Cakes with Lemon Yogurt Sauce. My son has liked exactly none of them (no surprise there!). My husband gave the thumbs up to all 3. As for myself, I was really happy with the Salmon Cakes … okay with the Tomato Soup … and disappointed with the Panini. I love eggplant but the artichoke mayo just didn’t have the impact that I thought it would. Oh well. Next on tap is a new roast turkey recipe along with corn & spinach in garlic sauce!

Extra car or help someone in need?
Okay, so we have two cars, one of which is seldom used. And we know someone who needs a car so we’re seriously considering giving it to them. I can’t say I’m totally comfortable with having only one vehicle in the family though. Of course, it would also reduce our insurance premiums even more than they are with our current cheap car insurance. That’s definitely a positive. And I suppose we should go online for free auto insurance quotes to see just how much we could save on the remaining vehicle. But it’s not about the money as much as it is a change in lifestyle, or at least a change in my perspective on our lifestyle.
Snow Day!
Yesterday was a snow day and the neighborhood kids invaded our house for hot chocolate, video games and happy meals. Between jaunts playing in the foot of snow which fell the night before, that is. A snow fort was erected, our puppy put through his paces in the deep white stuff, and some sledding at the local school were enjoyed by all. Especially the boys in the group (ages 8 and 5) who were both excited to “catch some air” on the way down the slope. The girls … not so much. Me, I love the snow!
